Canapés with Corn: June 29, 2011

If you have a habit of deep freezing white sauce, corn kennels…etc than this starters will be very instant for you & a very
pleasing for your family & guests too…& all those who are diet conscious can also enjoy this recipe…

Requirements:

Wheat Canapes : 12 to 15

White Sauce : ½ Cup

Cheese : ½ Cup

Green Chillies : 2

Onions : 1 Medium Size

Capsicum : 1 Medium Size

Corn Kennels : ½ cup

Butter : ½ Table Spoon

Salt to taste

Coriander for garnishing

Ketchup for garnishing 

Process:

Step 1: Heat butter in a pan & saute chopped onions till they turn translucent.

Step 2: Add finely chopped green chillies & capsicum & stir fry them for a minute or two.

Step 3: Add boiled corn kennels & salt to taste to the above mix & sauté for 2 to 3 more minutes.

Step 4: Add the prepared thick white sauce & grated cooking cheese & mix everything well.

Step 5: Cook the above mix for 2 to 3 minutes.

Step 6: Remove the pan from heat & take the mixture out in a bowl, let the mixture come down to room temperature.

Step 7: While serving add the prepared mix into each canapés as per your wish (advisable is to feel the canapés to 3/4th
level.

Step 8: Drop one to two drops of ketchup on each canapé.

Step 9: Garnish with coriander leaves (this is optional) as this will give try color look to your starter.

 

Capsicum Tomato Sauce: June 28, 2011

A recipe of dip with an Indian touch to it…serve it with cheese crackers, potato wafers, chips etc…

Requirements:

Capsicum : 1 Large

Tomatoes : 3 medium

Cloves : 2

Cinnamon Stick : 1 inch

Curry Leaves : 6 to 7

Chilli Powder : 2 Tea Spoons

Oil : 3 Table Spoons

Butter : 1 Table Spoon

Tomato Ketchup : ½ Table Spoon

Salt as required

Process:

Step 1: Dice Tomatoes & Capsicum.

Step 2: Sauté them in a pan with about 2 table spoons of oil & salt as per taste for 5 to 7 minutes.

Step 3: Let the above come down to room temperature.

Step 4: Grind it in a blender & make a smooth puree.

Step 5: Heat 1 table spoon of oil & 1 table spoon of butter in a pan.

Step 6: Add the cloves, cinnamon stick & curry leaves, let them get tempered.

Step 7: Pour the smooth puree of sauté veggie & stir it well.

Step 8: Add chilli powder as per taste.

Step 9: Add tomato ketchup in the above mixture & cook it for 4 to 5 minutes on medium flame.

Step 10: Once the sauce becomes thick remove the pan from heat & serve as per your wish, either hot or on room temperature.

Tips:

1: Don’t add water while making puree, you will need to cook it for long time till the water portion gets evaporated.

2: Before serving this dip/sauce to your family or guests, remove the cloves, cinnamon stick & curry leaves; so that your family can
enjoy it hassle-free.

 

Spinach Rolls with Tomatoes & Mayonnaise Deep: June 26, 2011

A really good recipe for to serve in front of your guest…as it has different way of presentation & definitely a yummy taste too..

Requirements for Dough:

Maida : 1 Cup

Salt to taste

Water as required

Oil for frying

Requirements for Filling:

Spinach Leaves : 1 ½ Cup

Cheese : ½ Cup

Paneer :  ½ Cup

Green Chilli : 1 Tea Spoon

Garlic Cloves: 3 to 4

Onions : 1 medium

Olive Oil : 1 Table Spoon

Salt to Taste

Requirements for Sauce:

Tomato Puree : 1 Table Spoon

Mayonnaise : 2 Table Spoons

Salt & Pepper to taste

Process:

Step 1: Prepare the dough for purees (each of 1 ½ inch diameters) & keep it aside for rest for nearly 15 to 20 minutes.

Step 2: Heat Olive oil in a pan & sauté finely chopped garlic & green chilli in it.

Step 3: Add finely chopped onions & sauté them till they are transparent.

Step 4: Add finely chopped spinach leaves (cut them lengthwise) & saute them for 1 to 2 minutes.

Step 5: Add grated paneer & cheese to the above mixture.

Step 6: Add salt to taste, mix everything well & let it cook for about 3 to 4 minutes.

Step 7: Meanwhile stir them 3 to 4 times in between.

Step 8: Remove the cooked mixture in a bowl & let it get cool for some time.

Step 9: Add the tomato puree in a pan & start cooking the same on medium heat.

Step 10: Once the tomato puree comes to boiling point, add the mayonnaise to it with salt & pepper to taste.

Step 11: Cook them about 2 to 3 minutes.

Step : For the presentation : Take one fried puree, put the prepared filling in between & fold the puree from both the sides &
insert a toothpick in the centre (length wise).

Step 12: Prepare the remaining purees in the same way.

Step 13: Take the Tomato & Mayo sauce in a serving dish, keep all the purees into it & serve them hot.
